Sweeteners

How much do you know about sweeteners? In the our world, sugar-alternatives have become incredibly popular. It’s important to remember, however, not all sweeteners are created equal - both in taste and impact. That’s why we’ve strategically selected sweeteners that deliver the ultimate ice cream experience while keeping your body’s metabolic needs in mind.

*Not a low calorie food

Allulose kicks off our line up with a sweet 4g per serving in every pint. Allulose is the new kid on the sweetener block and is actually considered a rare sugar found in nature. Despite its close resemblance to the traditional stuff, it has one tenth of the calories as table sugar. Allulose can be found naturally in small amounts of foods that you’re probably already very familiar with including figs, maple syrup, and raisins. Allulose has been shown to not have an impact on blood sugar, so be sure to subtract it (along with fiber and sugar alcohols) when calculating a product’s net carbohydrate content.

Often referred to as Luo Han Guo, Monk Fruit first gained it’s popularity in China and Thailand. In fact, it all began more than a thousand years ago, when Luo Han monks (hence the name) in China initially discovered it and started harvesting the green fruit. It’s been used medicinally throughout history but is now more commonly known and used as a sweetener. Monk fruit is 300x sweeter than sugar, and may have no impact on blood glucose levels and insulin. Monk Fruit also has impressive antioxidant properties and might just be the perfect addition to your keto arsenal.

MCT Oil

Medium Chain Triglycerides (MCT oil) are molecules found naturally in coconut and palm oil. Our MCT oil (C8 or, more specifically, caprylic acid), is sourced from coconut oil. MCT’s are NOT coconut oil, rather they exist in coconut oil along with other fats and types of MCTs. Your body may be able to rapidly convert MCT’s into ketones as they are digested differently than other fats. Once consumed, they are sent directly to the liver to be converted into ketones. Often referred to as a super-fuel, ketones are an alternative energy source that are produced by the body when in a fasted state or on a ketogenic diet. Research suggests that a ketogenic diet, and even ketones themselves, may provide great health benefits including lowered inflammation, increased cognitive brain function*.

Prebiotic fiber

We strategically chose to use a prebiotic fiber in our ice cream called Soluble Corn Fiber. Soluble Corn Fiber is not to be confused with high fructose corn syrup. Unlike other fibers on the market, our fiber of choice may have more than double the stomach tolerance, meaning it’s pretty unlikely that you’ll experience stomach issues after eating it. Soluble Corn Fiber is broken down and digested by the bacteria in your gut and converted into short chain fatty acids (SCFAs),including an extra-special SCFA called Butyrate. This short chain fatty acid has been shown in research to offer many potential health benefits, including anti-inflammatory effects, cardiovascular system benefits, improved insulin sensitivity, and much more. There’s gotta be a better way.

That’s the thought Louis was obsessing over one day after a workout. Grabbing a couple of gas station ice cream sandwiches with a friend, he was inspired, relentless, and determined about finding a way to keep everything we all love about ice cream, except the sugar.

As a cutting-edge food scientist and innovator, Louis has honed his vision, applied his talent, and pushed the envelope for fantastic tasting ice cream without any unnecessary and unwanted sugar. Some people say he’s a wizard. We just say he’s Louis.

First, the vision manifested in pints—the purest expression of ice cream. Not content with just plain ol’ vanilla (though how we love it!) or chocolate, Louis pushed himself and the team to go bold – and landed incredible results with mouth-watering flavors like Raspberry Chocolate Chunk, Brown Butter Pecan, and the fan-favorite, aptly named “Kitchen Sink.” Even the sugar-dependent guys can’t deliver flavors like this.

But Louis and the Killers didn’t stop there.

Harkening back to the fateful day when Louis wished for a nutrient-dense ice cream sandwich, that’s precisely where the team went next. And delivered.
